Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Prepare the pie crust and place it in a large deep pie dish.

  2. Slice the fat pork very thin.

  3. Slice the juicy apples.

Assemble and bake

  1. Layer the apples and pork in the dish, adding a little allspice, pepper, and sugar between each layer.

  2. Repeat the layering until you have four or five layers of each.

  3. Cover with a pie crust on top.

  4. Bake at 400°F (200°C) for one hour.

Juicy apples
Release moisture and provide tart, fruity body that balances the rich pork.
Sugar
Adds sweetness and helps the apples and pork brown at the surface.
Pie crust
Forms the structural shell that holds the layered filling together while baking.
