Roasted Larks

Ingredients

Directions

The book gives no oven temperature. The 400°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Clean and prepare the larks for roasting.

  2. Brush the larks with the egg yolk and roll them in bread crumbs.

Roast

  1. Skewer the larks on a small spit and tie it to a larger spit.

  2. Roast over a hot fire (400°F / 200°C) for 10 to 15 minutes, basting with fresh butter.

  3. Sprinkle additional bread crumbs over the larks while roasting.

Serve

  1. Fry grated bread in butter until golden, then drain to harden.

  2. Serve the fried crumbs under the larks and garnish with lemon slices.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Small larks
The main protein; cooked whole and roasted over a hot fire.
Egg yolk
Brushed on so the bread crumbs adhere to the birds before roasting.
Bread crumbs
Form a coating that helps the outside brown and crisp as it roasts.
Fresh butter
Basting fat that adds richness and promotes browning on the surface.

The step that matters

Roast over a hot fire for 10 to 15 minutes. Small birds cook through quickly, so overcooking dries the meat, while too little heat leaves the crumb coating pale and soggy. Basting with butter helps keep the surface moist and golden.

Swap the lemon

How well each one fits the dish's main ingredients (egg, bread, butter):

  1. Figfits better
