Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Blanch and finely pound the sweet and bitter almonds.

  2. Beat the egg whites until very dry.

  3. Gradually add the sugar, one teaspoon at a time, while continuing to beat the egg whites.

  4. Gently stir in the pounded almonds.

Bake

  1. Drop spoonfuls of the mixture onto white paper, about 1 inch apart.

  2. Bake in a slow oven at 300°F (150°C) until they do not darken.

What each ingredient does

Egg whites
Whipped to a dry foam that gives the cakes their light, airy structure.
Pulverized sugar
Stabilizes the whipped whites and adds sweetness and a crisp, set texture when baked.
Sweet almonds
Provide the bulk of the almond flavour and body, giving the cakes a tender crumb.
Bitter almonds
Add a concentrated, aromatic almond flavour in small amount.

The step that matters

Baking until they do not darken. Baking slowly at a low temperature dries and sets the meringue-like mixture without browning it. Higher heat would brown the sugar and almonds before the centres are set, changing the colour and flavour.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
