Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Cream the butter and sugar together until smooth.

  2. Beat in the egg yolks one at a time, then add the grated nutmeg and rose-water.

  3. Whip the egg whites until stiff and fold them into the mixture.

  4. Gradually add the flour, mixing until smooth.

  5. Add the baking soda and cream of tartar, mixing well.

Bake

  1. Pour the batter into a "Turk's turban" mold.

  2. Bake in a warm oven, gradually increasing the temperature to 350°F (175°C) until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and bind the batter, while whipped whites add lift and a light, airy crumb.
Butter
Creaming with sugar traps air and adds fat for a tender, rich texture.
Sugar
Creamed with butter to form a smooth base and add sweetness and browning.
Flour
Provides the structure that sets the cake as the batter bakes.
Baking soda
Reacts with the acid in the batter to produce gas that helps the cake rise.
Cream of tartar
Acidifies the batter, helping the baking soda react and stabilizing the whipped whites.

The step that matters

Whipping and folding the egg whites. Whites must be whipped until stiff but not dry, then folded in gently. Overbeating makes them grainy and deflates the batter, while stirring harshly knocks out the air that gives the cake its lift.
