Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Blanch the almonds and pound them into a paste.

  2. Add the sugar and the beaten egg whites to the almond paste.

  3. Mix everything well with the back of a spoon.

Shape and bake

  1. Roll the mixture into balls about the size of a nutmeg.

  2. Place them on a sheet of paper at least 1 inch apart.

  3. Bake in a cool oven at 300°F (150°C) until light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the main body and nutty flavor of the macaroons.
Fine white sugar
Adds sweetness and helps the macaroons brown as they bake.
Egg whites
Bind the almond paste and give the macaroons a light, set structure.

The step that matters

Baking in a cool oven. Baking at a low temperature dries the outside gently while keeping the inside tender. A hotter oven would brown or spread the macaroons too quickly before they set.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
