Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat the egg whites until very dry.

  2. Gradually add the powdered sugar, one teaspoon at a time.

  3. Stir in the chopped almonds.

Shape and bake

  1. Drop the mixture onto white paper in conical shapes using a teaspoon.

  2. Place the paper on baking sheets and bake in a cool oven at 300°F (150°C) until they can be removed from the paper without breaking.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped to a dry foam that gives the cakes their light, airy structure.
Powdered sugar
Added gradually to the whipped whites, it sweetens and stabilises the foam.
Sweet almonds
Provide the main flavour and body, forming the bulk of the cakes.

The step that matters

Beating the egg whites until very dry. Under-whipped whites will not hold a stable foam, so the batter collapses and the cakes spread flat. Whites beaten to a firm, dry peak trap air that sets during gentle baking.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
