Pine-apple Tart

Ingredients

Directions

  1. Remove the leaves from the pineapple and quarter it without peeling.

  2. Stand each quarter in a deep plate and grate it down to the rind.

  3. Strew plenty of powdered sugar over the grated fruit and let it rest for 1 hour.

  4. Put the grated pineapple into a porcelain kettle and steam it in its own syrup until perfectly soft.

  5. Prepare empty shells of puff pastry by baking them in patty pans or soup plates.

  6. Once the shells are cool, fill them with the grated pineapple, add more sugar, and lay a border of puff pastry around the rim.
