Quince Tart

Ingredients

Directions

Prepare the quince

  1. Wash, pare, and core the quinces, removing any blemishes.

  2. In a small saucepan, stew the cores and parings in a little water until broken into pieces; strain and save the quince water.

  3. Quarter or slice the quinces and place them in a porcelain stew-pan; pour the reserved quince water over them.

  4. Cook until the quinces are soft throughout, then sweeten to taste.

Bake the shells

  1. Line deep plates with rich puff-paste.

  2. Bake until golden.

Fill and serve

  1. Once both the shells and the fruit are cold, fill the shells to the top.

  2. Serve with powdered sugar and rich cream, or dress with whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine ripe quinces
Provide the main fruit, whose softened flesh and natural pectin give the filling its body and flavour.
Rich puff-paste
Forms the crisp, flaky shell that holds the filling and browns during baking.
Powdered loaf sugar
Sweetens the cooked quince to taste and adds sweetness to the finished tart.
Rich cream or whipped cream
Adds richness and a soft, cooling contrast to the tart fruit.

The step that matters

Cool the shells and fruit before filling. Filling warm shells or hot fruit would soften the puff-paste from below and make it soggy, so both must be fully cold first.

Swap the quince

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Quincethe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
