Make the custard base

  1. Soak the isinglass or gelatine in cold water until softened.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass or gelatine
Sets the cream mixture so it holds its shape when chilled.
Cream
Provides richness and a smooth, soft body to the filling.
Eggs
Thicken the cream mixture as they gently cook and add richness.
Egg yolks
Add extra richness and help thicken the custard smoothly.
Sugar
Sweetens the filling and balances the flavor of the rose.

The step that matters

Return to low heat without boiling. Gently warming the egg mixture lets it thicken smoothly. Boiling would scramble the eggs, giving a grainy texture and a curdled filling.

Swap the almond

How well each one fits the dish's main ingredients (cream, sugar, rose, egg):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Walnutfits less well
  4. Chestnutfits less well

Fit is the average pairing score against cream, sugar, rose, egg. Candidates are from the same food group and used in at least 100 recipes.
