The flavor team

The pairs that carry this dish. Each one is judged two ways: how much aroma chemistry they share, and how many recipes mention both.

Milk and sugar share little aroma chemistry, yet 77,875 recipes mention both: they likely work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Isinglass
Gelatinous setting agent that firms the milk mixture as it cools into a pudding.
Sweet almonds
Supply the characteristic almond flavour and some richness and body to the pudding.
Milk
Forms the liquid base that the isinglass sets and gives the pudding its creamy texture.

The step that matters

Dissolving the isinglass completely. Isinglass must be fully dissolved in the hot milk before straining and moulding; undissolved pieces leave specks and weaken the set when the pudding cools.

Flavor stand-ins for the almond

How well each one fits the dish's main ingredients (milk, sugar):

  1. Cocoaabout as good a flavor fit
  2. Almondthe original
  3. Chestnutabout as good a flavor fit

Fit is the average pairing score against milk, sugar. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
