Choose eggs that are at least two days old but still fresh.
Strain boiling water through a clean cloth into a saucepan.
Break the eggs into a cup or saucer.
When the water boils, remove the pan from heat and gently slip in the eggs.
Once the egg whites are set, return the pan to moderate heat until the water boils again.
Remove the eggs with a slotted spoon and trim any ragged edges.
Cut the bread into pieces slightly larger than the eggs and about ¼ inch thick.
Toast the bread on one side until it is lightly colored.
Optionally, moisten the toast with hot water and sprinkle with vinegar or lemon juice.
