What each ingredient does
- Carbonate of soda
- Dissolves in the water and reacts with the acid to release carbon dioxide, which makes the drink fizz.
- Tartaric or citric acid
- Reacts with the carbonate of soda to release carbon dioxide gas and gives the drink a tart flavour.
The step that matters
Cork and wire the bottles immediately. Once the acid is added, carbon dioxide begins to form and escape. Sealing the bottles right away traps the gas, so the water stays fizzy rather than going flat.
