Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

Make the meringue

  1. Beat the egg whites until very stiff.

  2. Gradually add the sugar while continuing to beat until well combined.

  3. Fold in the ground almonds gently.

Bake

  1. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper.

  2. Bake in the oven until the kisses are set and lightly golden.

What each ingredient does

Egg whites
Whipped into a foam that gives the kisses their light, airy structure.
Sugar
Stabilises the whipped egg white foam and adds sweetness and crisp browning.
Ground almonds
Add body, nutty flavour and a tender texture to the baked kisses.

The step that matters

Fold in the ground almonds gently. Folding keeps the air trapped in the whipped egg whites. Vigorous stirring deflates the foam, so the kisses spread flat and bake up dense.

Swap the almond

How well each one fits the dish's main ingredients (egg, sugar):

  1. Pecansfits about as well
  2. Almondthe original
  3. Chestnutfits about as well
  4. Milletfits less well
