What each ingredient does

Green peppers
Provide the hollow shell that holds the filling and the crisp, fresh bite of the salad.
Neufchâtel cheese
Forms the creamy, mild filling that holds its shape when mashed and chilled.
Pimento
Lines the peppers, adding sweet, mild flavour and colour against the green shell.
Cream
Adds moisture so the cheese mixture becomes smooth and easy to spread and stuff.

The step that matters

Set the stuffed peppers on ice until chilled. Chilling firms the soft cheese filling so it holds its shape when sliced into clean rings instead of smearing or crumbling.
