What each ingredient does

Gelatin
Sets the juice mixture into a firm, sliceable salad.
Sugar
Adds sweetness and balances the sharpness of the lemon juice.
Lemons
Provide acidity that brightens the sweet pineapple juice.
Pineapple chunks
Add sweet flavor and juicy texture to the set salad.
Cucumber
Adds crisp texture and a mild, fresh flavor.

The step that matters

Adding the cucumber and pineapple at the right moment. Fruit and cucumber added to liquid that is still too thin will sink or float unevenly. Folding them in only once the mixture begins to set keeps the pieces suspended through the salad.

Swap the pineapple
