The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and lemon barely smell alike, yet cooks put them together in 53,532 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the ice and lowers the freezing point so it stays softer.
Grapefruits
Provide the main flavor, juice, and shredded pulp for texture.
Lemons
Add acidity that brightens the flavor and balances the sweetness.

The step that matters

When it starts to freeze, add the shredded grapefruit. Adding the fruit once ice crystals begin to form keeps the pulp distributed rather than sinking or freezing into a solid mass. Sugar and acid in the base also affect how firmly it sets.

Swap the grapefruit

How well each one fits the dish's main ingredients (sugar, lemon):

  1. Orangefits better
  2. Limefits better
  3. Vanillafits about as well
  4. Grapefruitthe original

Fit is the average pairing score against sugar, lemon. Candidates are from the same food group and used in at least 100 recipes.
