What each ingredient does

Green tomatoes
Provide the bulk of the pickle and its tart, fresh body.
Cabbage
Adds crisp texture that holds up through the pickling.
Cucumbers
Contribute crunch and fresh moisture to the mixed vegetables.
Vinegar
Acidity that preserves the vegetables and sharpens the flavour.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.
Coarse sea salt
Draws moisture out of the vegetables, helping them stay crisp and firm.

The step that matters

Let the mixture stand overnight. Salt draws water out of the chopped vegetables through osmosis. Standing time lets this happen fully, so the pickle ends up firmer and less watery after cooking.
