Why it works: Sage and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
To Scald a Sucking-pig
Ingredients
Directions
Put the pig in cold water for a few minutes.
Rub it with a little finely beaten resin.
Submerge it in scalding water for 1 minute.
Remove the pig and quickly pull off the hair.
If any hair remains, return it to the scalding water.
Wash the pig well with warm water, then rinse in 2 or 3 cold waters.
Remove the feet at the first joint and make a slit down the belly to remove the entrails.
Place the liver, heart, and lights with the feet.
Wash the pig in cold water, dry it thoroughly, and wrap it in a wet cloth to keep it from air exposure.
