Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork
Provides lean meat for the main body and texture of the sausage.
Beef suet
Adds fat that keeps the filling moist and tender as it cooks.
Bacon fat
Contributes extra fat and savoury flavour to the filling.
Gammon
Adds cured, salty meat flavour to the filling.

The step that matters

Prick the sausage before boiling. Pricking lets steam escape from the filling as it heats, which helps prevent the skin from bursting while the sausage cooks in boiling water.

Swap the sage

How well each one fits the dish's main ingredients (pork, beef, veal, pepper):

  1. Sagethe original
  2. Marjoramfits about as well
  3. Thymefits about as well
  4. Parsleyfits less well

Fit is the average pairing score against pork, beef, veal, pepper. Candidates are from the same food group and used in at least 100 recipes.
