Why it works: Lemon and orange match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 10,634 recipes. Both carry 3-hexenal, which smells apple, fruity. The science ↓
Cowslip Wine
Ingredients
Directions
Make the liquor
Boil 1 gallon of water with 3 lbs of lump sugar for 1 hour, skimming off the scum.
Once cool, add a crust of toasted bread dipped in thick yeast and let it ferment in a tub for 36 hours.
Ferment with the fruit
Add the peels and pips to the cask, then pour the liquor over them.
Stir the mixture daily for 1 week.
Mature and bottle
After a week, add 1 bottle of brandy for every 5 gallons.
Seal the cask tightly and let it stand for 6 weeks before bottling.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Lump sugar
- Provides the sweetness and the fuel that yeast turns into alcohol during fermentation.
- Thick yeast
- Drives fermentation, converting sugar into alcohol and carbon dioxide.
- Cowslip pips
- Supply the main floral flavour of the wine.
- Lemon peel and rind
- Add bright citrus aroma and oils to the wine.
- Seville orange rind
- Adds aromatic citrus oils and a slight bitterness.
- Brandy
- Raises the alcohol content, adding strength and helping preserve the wine.
The step that matters
Seal the cask tightly. A tight seal limits air reaching the wine, which keeps the maturing liquid from oxidising and spoiling while it stands for six weeks.
Swap the lemon
How well each one fits the dish's main ingredients (sugar, bread, orange, brandy):
- Vanillafits better
- Figfits better
- Apricotfits better
- Lemonthe original
Fit is the average pairing score against sugar, bread, orange, brandy. Candidates are from the same food group and used in at least 100 recipes.
