Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken or turkey carcass
Releases flavour and body into the broth as it simmers.
Potatoes
Break down as they cook, adding body and thickening the soup.
Rice
Softens fully and adds starch, giving the soup a thicker texture.
Milk
Adds richness and creaminess, making the soup smooth and mellow.
Cornstarch
Thickens the milk-enriched soup so it turns silky rather than thin.

The step that matters

Adding the cornstarch and butter mixture. Cornstarch clumps if dropped in dry, so rubbing it smooth into butter first helps it disperse evenly. Once stirred into the hot liquid, it thickens as its starch granules swell with heat.

Swap the turnip

How well each one fits the dish's main ingredients (chicken, onion, potato, rice, milk, butter, pepper):

  1. Capsicumfits better
