Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Haddock
Forms the main body of the mould and provides the flaky texture once set.
Eggs
Bind the fish and bread together so the mould holds its shape when steamed.
Bread
Soaked in milk, it adds moisture and softness, keeping the mould tender rather than dense.
Butter
Adds richness and fat, improving flavour and moistness of the set mould.

The step that matters

Steam the mould until set. Steam heat must set the egg gently. Too much heat or time makes the egg curdle and turn the mould rubbery or watery.

Swap the tomato

How well each one fits the dish's main ingredients (haddock, bread, milk, butter, egg, pepper, parsley):

  1. Potatofits better
  2. Capsicumfits better
  3. Chivefits about as well
  4. Tomatothe original

Fit is the average pairing score against haddock, bread, milk, butter, egg, pepper, parsley. Candidates are from the same food group and used in at least 100 recipes.
