Roast Quail with Bread Sauce

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the quail

  1. Prepare the quail by removing the heads and feet, then wipe them with a wet towel.

  2. Rub the quail with butter.

  3. Season the quail with salt and pepper.

Make the bread sauce

  1. Heat the sliced onion in the milk in a saucepan.

  2. Remove the onion from the milk.

  3. Stir the onion in the finest bread crumbs, white pepper, nutmeg, and 1 tablespoon of butter until smooth.

  4. Keep the sauce warm in a pan of boiling water.

Roast and fry

  1. Roast the quail in a 400°F (200°C) oven for 15 minutes, basting with butter 3-4 times.

  2. Place slices of toast under the quail to catch drippings.

  3. Heat 2 tablespoons of butter in a frying pan until smoking.

  4. Add the coarse bread crumbs to the pan.

  5. Dust the breadcrumbs with cayenne pepper.

  6. Fry the breadcrumbs until light brown.

Serve

  1. Serve the quail on the toast, topped with a spoonful of bread sauce and fried breadcrumbs.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Quail
Provides the main meat, which roasts until cooked through and tender.
Milk
Simmered with onion to make a mildly sweet, creamy base for the bread sauce.
Dry bread crumbs
Thicken the milk into a smooth sauce that holds its body when warm.
Butter
Adds fat and richness, and browns the quail and crumbs as it cooks.
Onion
Infuses the milk with savory, aromatic flavor for the sauce.

The step that matters

Frying the breadcrumbs in smoking butter. Butter that is too hot can burn before the crumbs brown evenly, leaving bitter flavor. Stirring and watching the color keeps the crumbs golden and crisp rather than dark.

Swap the white pepper

How well each one fits the dish's main ingredients (onion, milk, quail, butter, pepper, bread, nutmeg):

  1. Cinnamonfits better
