Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shank of meat
Provides the main body of the dish and, as it cooks, the savoury broth that sets the mixture.
Gelatin
Sets the cooking liquid into a firm mass when cooled, holding the diced meat together in the mold.

The step that matters

Mixing in the gelatin and boiling briefly. Gelatin must be fully dissolved and only boiled a short time, because prolonged boiling weakens its setting power. The mixture must then be poured into a cold mold so it sets firmly rather than staying loose.

Swap the mace

How well each one fits the dish's main ingredients (meat, pepper, celery, allspice, clove, gelatin):

  1. Cinnamonfits better
  2. Thymefits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against meat, pepper, celery, allspice, clove, gelatin. Candidates are from the same food group and used in at least 100 recipes.
