Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the base

  1. Soak the dried bread crumbs in fresh milk.

  2. Beat the egg yolks and mix in the butter and grated cheese.

Bake and top

  1. Pour the mixture into a baking dish and sprinkle sifted bread crumbs on top.

  2. Bake at 350°F (175°C) until golden brown.

  3. Whip the egg whites to stiff peaks and spread on top of the baked mixture.

  4. Return to the oven for a few minutes until the egg whites are set.

What each ingredient does

Dried bread crumbs
Absorb the milk to form a soft, body-giving base for the custard.
Egg yolks
Bind the mixture and help it set into a tender, custardy texture.
Grated cheese
Adds rich flavor and fat, and helps the base set as it bakes.
Egg whites
Whipped to stiff peaks, they form a light, airy topping that sets in the oven.

The step that matters

Returning the egg whites to the oven. Whipped egg whites set with gentle heat. Baking too long or too hot can overcook them, making them dry, tough, or weepy, so watch them closely and stop once they are just set.
