Why it works: Cream and gelatin match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 1,628 recipes. Both carry acetic acid, which smells sour, vinegar. The science ↓
Caramel Cream
Ingredients
Directions
Make the caramel cream
Boil 2 cups of dark brown sugar with an egg-sized piece of butter and ⅔ cup of thin sweet cream.
After 12 minutes of boiling, dissolve ½ cup of gelatin in a little cold water.
Add the dissolved gelatin to the boiling mixture along with 1 pint of sweet cream, reserving the ⅔ cup used earlier.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Dark brown sugar
- Provides sweetness and a deep caramel flavor as it boils.
- Gelatin
- Sets the cooled cream into a firm, sliceable body.
- Sweet cream
- Adds richness, body and a smooth, creamy texture.
- Butter
- Adds fat for richness and a rounder, buttery flavor.
- Vanilla
- Adds aroma that rounds out the caramel sweetness.
The step that matters
Let it stand overnight in the ice. Gelatin only firms as the mixture cools fully, so it needs a long, cold rest. Cutting the chill short leaves a soft, loose set that may not hold its shape when unmolded.
