Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Provides richness and a smooth, thick body from its fat content.
White sugar
Adds sweetness and balances the richness of the cream.
Lemon peel or vanilla extract
Adds a bright citrus or vanilla aroma to the sauce.

The step that matters

Boiling the cream with sugar. Cream can rise quickly and boil over, and its milk solids can scorch on the bottom of the pan. Watch closely and stir so the sugar dissolves and the sauce heats evenly.

Swap the lemon

How well each one fits the dish's main ingredients (cream, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Lemonthe original

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
