Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. Cream the butter and sugar together until light and fluffy.

  2. Add the eggs one at a time, mixing well after each addition.

  3. Stir in the milk and vanilla or lemon extract.

  4. Gradually add the pastry flour and prepared flour, mixing until just combined.

  5. Pour the batter into a greased cake pan.

Bake

  1. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creamed with sugar to trap air, giving the cake a light, tender crumb and rich flavor.
Sugar
Creamed with butter to help create a fine, airy structure and adds sweetness.
Eggs
Add structure and richness and help bind the batter as they are mixed in.
Milk
Adds moisture and hydrates the flour so the batter flows and bakes evenly.
Pastry flour
Low-protein flour that forms a fine, tender crumb with less chew than stronger flours.
Prepared flour
Provides the flour structure that sets the cake as it bakes.

The step that matters

Mixing in the flour. Once the flour is added, mixing only until combined keeps gluten development low. Overmixing toughens the batter and makes the cake dense rather than delicate.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, butter, egg, milk, flour):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against sugar, butter, egg, milk, flour. Candidates are from the same food group and used in at least 100 recipes.
