Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet cream
Provides richness and a smooth, full body to the sauce.
Butter
Adds fat for a silky texture and a rounded, rich flavour.
Strained soup stock
Adds savoury depth that flavours the cream base.

The step that matters

Add strained soup stock and let it boil. Cream can curdle or separate when it boils hard or for too long, so the sauce should be watched closely and kept from over-boiling to stay smooth.

Swap the parsley

How well each one fits the dish's main ingredients (cream, butter):

  1. Nutmegfits better
  2. Tarragonfits about as well
  3. Macefits about as well
  4. Parsleythe original

Fit is the average pairing score against cream, butter. Candidates are from the same food group and used in at least 100 recipes.
