Olives a LzV Bellk Eugenie

Ingredients

Directions

  1. Line fluted timbal molds with aspic jelly colored olive shade and let set.

  2. Garnish the bottom with hard-boiled egg white cut into diamonds and add more aspic.

  3. Place one stuffed olive in each mold and fill with more aspic; chill until set.

  4. In paper cases, add 2 teaspoons of rubbed hard-boiled egg yolk.

  5. Dip molds in hot water, absorb moisture, and turn out onto yolk in paper cases.

  6. Rub hard-boiled egg white through a sieve and arrange around olives for a border.

  7. Roll caviar into small balls and prepare Montpelier and anchovy butter in piping bags.

  8. Garnish with butter alternately on the egg, leaving space to see the egg.

  9. Serve on glass plates with fancy dish-paper for hors d'oeuvre or savory.
