  1. Cut the chickens open at the back and place them in a deep pan.

  2. Season well with coarse sea salt and black pepper.

  3. Sift enough flour to almost cover the chickens.

  4. Lay the sliced tomato on top of the chickens.

  5. Spread the mixed butter and lard over the chickens.

Cook and brown

  1. Pour 2 to 3 pints of boiling water over them.

  2. Cover the pan closely to keep in the steam and set it in the oven.

  3. When the chickens are tender, remove the cover and let them brown slightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chickens
Form the main body of the dish, becoming tender as they cook in steam.
Flour
Coats the chicken and helps thicken the juices into a gravy.
Mixed butter and lard
Adds fat and richness, helping the surface brown and the meat stay moist.
Tomato
Adds acidity and a fresh flavour to the pan juices.

The step that matters

Letting the chickens brown after removing the cover. Once the cover comes off, the surface needs enough heat and fat to brown without drying out. Removing the cover only after the chickens are fully tender keeps the meat juicy while the skin colours.

Swap the tomato

How well each one fits the dish's main ingredients (chicken, pepper, flour, butter):

  1. Capsicumfits better
  2. Potatofits better
  3. Leekfits better
  4. Tomatothe original

Fit is the average pairing score against chicken, pepper, flour, butter. Candidates are from the same food group and used in at least 100 recipes.
