Cold Turkey a LA Grande Duchesse

Ingredients

Directions

  1. Prepare the turkey by singeing, cleaning, and removing the entrails and bones.

  2. Stuff the turkey, sew it up, and truss it for boiling.

  3. Dip the feet in boiling water, remove the skin, cut off sinews, and shorten the toes.

  4. Tie the turkey in a well-buttered cloth and boil in stock with vegetables and spices for 1.5 to 2 hours.

  5. Once cooked, remove the turkey, let it cool, and remove the strings.

  6. Mask the turkey with white chaudfroid sauce, applying 2-3 coats.

  7. When the sauce is set, lightly cover with aspic jelly and sprinkle with shredded pistachio nuts.

  8. Once the aspic is set, garnish the turkey with ornamentally cut aspic pieces and arrange crayfish, prawns, truffle, and pate de foie gras on skewers on the breast.
