Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. In a warm place, let 3 pints of milk stand until it is dry and light.

  2. Make a sponge with ½ cup of flour, ¼ cup of milk, and yeast; let it rise until ready to fall.

  3. Add 1½ pints of warm milk, sugar, lard or butter, and salt; knead for 10 minutes.

  4. Let it rise until it is 1½ times larger, then knead for 5 more minutes.

  5. Let it rise until it is twice as large, then shape into one large loaf or two small ones without extra flour.

  6. Let it rise for 30 minutes in a warm place, then chill the surface in a cool place for 5 minutes.

  7. Bake for 1 hour if large or 45 minutes if small at 350°F (175°C).
