What each ingredient does

Dried or smoked beef
Provides the main savoury, salty meat flavour of the dish.
Eggs
Set when stirred into the hot pan, binding the beef into a soft, tender mixture.
Butter
Adds fat and richness, helping the beef and eggs cook smoothly and taste rounder.

The step that matters

Beat the eggs well and add them to the pan. Eggs set quickly from heat. If the pan is too hot or they are overcooked during the short toss, they become tough and dry. Stirring gently while they are still soft keeps the mixture tender.
