Versailles Pineapple Cream

  1. Chill the pineapple mold in a charged ice cave for 30 minutes.

  2. Fill the top part of the mold with pistachio ice cream.

  3. Fill the body of the mold with pineapple ice, adding tangerine pulp and chopped peels.

  4. Fill the bottom of the mold with pistachio ice.

  5. Close the mold and return it to the ice cave for 3.5 to 4 hours, turning occasionally.

  6. To serve, turn out the ice onto a tall dessert dish and garnish with assorted shapes of pistachio and pineapple ice, and sprigs of fern.
