Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the sweet crystalline body of the candy as the syrup cooks and sets.
Vinegar
Acidity helps prevent sugar from recrystallizing, keeping the candy smooth and tender.
Glycerin
Softens the texture and helps keep the candy from becoming brittle.
Baking soda or cream of tartar
Added late to lighten the candy, creating a whiter, airier texture when pulled.

The step that matters

Boil without stirring to the crisp-ball stage. Stirring can trigger sugar crystals to form, making the candy grainy. Cooking must stop at the correct point, since too little heat leaves it sticky and too much makes it hard.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, egg, butter, vinegar, cream):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Raspberryfits less well
  4. Apricotfits less well

Fit is the average pairing score against sugar, egg, butter, vinegar, cream. Candidates are from the same food group and used in at least 100 recipes.
