Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and the sugar structure that sets the taffy's chewy body.
Vinegar
Adds acidity that helps keep the sugar from crystallising, giving a smoother texture.
Butter
Adds fat that softens the texture and keeps the taffy from feeling dry.
Vanilla
Adds aroma and flavour to the finished taffy.

The step that matters

Cooking to the hard ball stage. The sugar's final temperature sets the firmness of the taffy. Stopping early leaves it soft and sticky, while going too far makes it hard and brittle.
