What each ingredient does

Veal knuckle
Releases gelatin and meaty flavour into the broth as it simmers.
Old fowl
Adds deep poultry flavour and body to the broth during long simmering.
Mutton shank bones
Contribute marrow, collagen and rich savoury flavour to the stock.
Onion
Adds aromatic sweetness that rounds out the broth's flavour.

The step that matters

Skimming the foam after boiling. Foam carries coagulated proteins and impurities that can cloud the broth and taste bitter. Removing it early keeps the stock clear and clean-flavoured.
