Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean raw beef
Provides the meat flavour and body of the broth as it simmers slowly in the water.
Egg
Its white and shell collect fine particles as they set, leaving the soup clear.
Onion
Browning it in butter adds sweetness and savoury depth to the broth.

The step that matters

Boil for 5 minutes after adding the egg. Once the egg white is added, the soup must be brought to a boil and held briefly so the egg coagulates and traps impurities. Stirring too early or boiling too hard can break up the raft, leaving the soup cloudy.

Swap the mace

How well each one fits the dish's main ingredients (butter, onion, beef, egg, clove):

  1. Nutmegfits better
  2. Cinnamonfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against butter, onion, beef, egg, clove. Candidates are from the same food group and used in at least 100 recipes.
