Why it works: Bread and butter are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 27,232 recipes. Both carry delta-decalactone, which smells sweet, creamy. The science ↓
Veal Loaf
Ingredients
Directions
The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the loaf
Mince the veal and bacon or ham thoroughly.
Season with pepper, a little coarse sea salt, nutmeg, and herbs.
Add the bread crumbs, beaten eggs (reserving some), and stock; mix thoroughly.
Press the mixture into a square pan to shape it.
Bake and serve
Turn out the loaf and brush the top with the reserved beaten egg.
Bake at 300°F (150°C) for 1½ hours, basting occasionally with melted butter mixed with water.
Serve with brown gravy thickened slightly.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Veal
- Forms the main body of the loaf and gives it a mild, tender texture.
- Bacon or ham
- Adds fat and savory flavor, keeping the lean meat moist as it bakes.
- Eggs
- Bind the meat and crumbs together so the loaf holds its shape when sliced.
- Bread crumbs
- Absorb moisture and soften the texture, helping the loaf stay tender and juicy.
The step that matters
Basting the loaf in the oven. Veal is very lean, so it can dry out during the long, low bake. Occasional basting with butter and water adds fat and moisture to the surface, keeping the loaf juicy.
Swap the nutmeg
How well each one fits the dish's main ingredients (veal, ham, pepper, bread, egg, butter):
- Parsleyfits better
- Nutmegthe original
- Sagefits about as well
- Marjoramfits about as well
Fit is the average pairing score against veal, ham, pepper, bread, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
