ziPPLE Meringue Pudding

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the apple base

  1. Prepare the apples as for a pie and stew until almost a pulp.

  2. Sweeten and spice to taste.

  3. While the apples are hot, gradually stir in the egg yolks.

  4. Pour the mixture into a buttered dish and bake for 10 minutes at 350°F (175°C).

Make the meringue and finish

  1. Make the meringue by beating the egg whites until stiff.

  2. Gradually add 2 tablespoons of sugar and the almond extract to the meringue.

  3. Spread the meringue over the pudding quickly and return to the oven to brown slightly without opening the door.

  4. Serve hot or cold, as preferred.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Stewed apples
Provide the bulk and moist, flavourful body of the pudding.
Eggs
Yolks thicken the warm apple base; whites whip into the meringue that sets and browns on top.
White sugar
Sweetens the apples and stabilises the beaten egg white foam for the meringue.

The step that matters

Spreading and browning the meringue. Meringue must be spread quickly over the warm pudding and browned without opening the oven door. Egg white foam deflates and weeps when it cools or is disturbed, and the sudden temperature drop can make it collapse or go soggy.

Swap the apple

How well each one fits the dish's main ingredients (egg, sugar, butter, almond):
