Spanish Bun

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure. The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the butter and sugar until light and fluffy.

  3. Add the eggs one at a time, mixing well after each addition.

  4. Stir in the sweet milk and mix until combined.

  5. Gradually add the flour and Magic Baking Powder, mixing until smooth.

  6. Pour the batter into a greased baking pan.

Bake and ice

  1. Bake for 25-30 minutes or until a toothpick comes out clean.

  2. For the icing, beat the egg whites until stiff peaks form.

  3. Gradually add 1½ cups of sugar, continuing to beat until glossy.

  4. Spread the icing over the cooled bun.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with the sugar to trap air and give the bun a tender, rich texture.
Eggs
Add structure and richness, binding the batter as it bakes.
Flour
Forms the main structure of the bun as the batter sets in the oven.
Magic baking powder
Releases gas during baking so the bun rises and becomes light.
Sugar
Sweetens the bun and, beaten with egg whites, gives the icing its body and gloss.

The step that matters

Beating the egg white icing. Egg whites must be beaten to stiff peaks before the sugar is added gradually; under-beaten or greasy whites will not hold air, leaving a runny, dull icing.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
