Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Canned tomatoes
Form the main body of the salad and provide its tomato flavor and moisture.
Knox's gelatine
Sets the strained tomato mixture so it holds its shape in molds.
Lemon juice
Adds acidity that brightens the tomato flavor.

The step that matters

Soak the gelatin before adding it. Gelatine must first hydrate in cold water so it dissolves evenly into the hot tomato mixture; added dry or unevenly, it can form lumps and set unevenly.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (tomato, celery, pepper, lemon):

  1. Capsicumbetter flavor fit
  2. Carrotbetter flavor fit
  3. Okrabetter flavor fit
  4. Onionthe original

Fit is the average pairing score against tomato, celery, pepper, lemon. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
