Fruit Salad

Ingredients

Directions

Prepare

  1. Peel the grapefruit or orange, removing all the bitter white skin.

  2. Cut the pulp, banana, and apple into small dice.

  3. Finely chop the celery.

  4. Combine the orange and apple; the apple will absorb the orange juice.

  5. Chill all ingredients on ice until serving.

Assemble and serve

  1. Mix the fruit and celery together in a salad bowl.

  2. Cover with cream dressing mixed with an equal amount of cream and a little more salt.

  3. Serve on a bed of tender lettuce leaves.

What each ingredient does

Apple
Adds firm, crisp texture and bulk that holds its shape among the softer fruit.
Banana
Adds soft body and natural sweetness that balances the tart citrus.
Grapefruit or orange
Provides bright citrus acidity and juice that moistens the salad.
Celery
Contributes crunch and a mild, fresh contrast to the soft fruit.
Cream dressing
Adds fat and richness that coats the fruit and softens the citrus tartness.

The step that matters

Removing the bitter white skin. The white pith under the peel is bitter, so leaving any of it on the fruit will make the salad taste harsh. Cutting away all of it before dicing keeps the flavour clean.

Swap the apple

How well each one fits the dish's main ingredients (grapefruit, celery, banana, cream, lettuce):

  1. Avocadofits better
  2. Limefits better
  3. Pineapplefits better
  4. Applethe original

Fit is the average pairing score against grapefruit, celery, banana, cream, lettuce. Candidates are from the same food group and used in at least 100 recipes.
