Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Mix the egg yolk with cayenne pepper to form a paste.

  2. Roll out the mixture to ¼ inch thick and about 5 inches long.

  3. Cut into strips about ⅓ inch wide.

  4. Twist the strips like a paper spill and place on a floured baking sheet.

  5. Bake at 350°F (175°C) until crisp but not browned.

  6. Store in a tin to keep fresh and serve cold on a glass dish.
