Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base and creamy body of the soup.
Flour
Thickens the soup as its starch gelatinizes when heated with the liquid.
Cornstarch
Adds extra thickening power, giving a smooth, glossy body.
Celery
Provides the main flavor and, once mashed, the body of the soup.
Butter
Adds richness and a smooth, rounded mouthfeel at the end.

The step that matters

Bring the base to a boil before adding celery. Flour and cornstarch only thicken fully once their starch granules have gently boiled in the liquid. Heating just to warm leaves the soup thin and possibly floury-tasting.

Swap the mace

How well each one fits the dish's main ingredients (milk, flour, pepper, onion, celery, butter, cream):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Thymefits better
  4. Macethe original

Fit is the average pairing score against milk, flour, pepper, onion, celery, butter, cream. Candidates are from the same food group and used in at least 100 recipes.
