What each ingredient does

Potatoes
Starch that mashes into a soft, cohesive body for the balls.
Codfish
Provides the salty, savory flavor that defines the dish.
Egg
Binds the mashed mixture and adds richness so the balls hold their shape.

The step that matters

Frying in smoking-hot beef fat. If the fat is not hot enough, the balls absorb grease and turn soggy instead of forming a crisp, golden crust. Hot fat sears the surface quickly, sealing in moisture so the inside stays tender.

Swap the potato

How well each one fits the dish's main ingredients (egg, beef):

  2. Chivefits about as well
  3. Potatothe original
