Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vinegar
Adds a sharp acidity to the poaching water, brightening the mild flavour of the fish.
Egg sauce
Adds richness and moisture, balancing the lean texture of the poached fish.
Capers
Add a briny, sharp accent that cuts through the richness of the egg sauce.

The step that matters

Cook for 12 minutes per pound. Salmon turns dry and chalky when overcooked, while undercooked centres stay raw. Timing by weight, then checking the thickest part, keeps the flesh moist and just set.

Swap the parsley

How well each one fits the dish's main ingredients (salmon, vinegar, capers, egg, sauce):

  1. Tarragonfits better
  2. Dillfits about as well
  3. Parsleythe original
  4. Garlicfits less well

Fit is the average pairing score against salmon, vinegar, capers, egg, sauce. Candidates are from the same food group and used in at least 100 recipes.
