Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Mince the veal and bacon or ham thoroughly.

  2. Season with pepper, a little coarse sea salt, nutmeg, and herbs.

  3. Add the bread crumbs and beaten eggs, mixing thoroughly.

  4. Press the mixture into a square pan to shape it.

Bake and serve

  1. Turn out the loaf and brush the top with reserved beaten egg.

  2. Bake at 300°F (150°C) for 1½ hours, basting occasionally with melted butter mixed with water.

  3. Serve with brown gravy thickened slightly.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it a firm, sliceable structure when cooked.
Bacon or ham
Adds fat and savory flavor, helping keep the minced meat moist as it bakes.
Eggs
Bind the mixture together and set as it cooks, holding the loaf in shape.
Bread crumbs
Absorb moisture and juices, giving the loaf a softer, more tender texture.

The step that matters

Baking at 300°F with occasional basting. Lean meat dries out when cooked too long or too hot. A low oven heats the loaf gently so the egg sets without toughening, and basting adds moisture to the surface.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, ham, pepper, bread, egg, butter):

  1. Parsleyfits better
  2. Nutmegthe original
  3. Sagefits about as well
  4. Marjoramfits about as well

Fit is the average pairing score against veal, ham, pepper, bread, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
