What each ingredient does

Veal breast
Forms the main body of the galantine and, once cooked and pressed, gives a firm, sliceable texture.
Sausage meat
Adds fat and seasoning to the filling, keeping the lean veal moist as it cooks.
Bread-crumbs
Absorbs juices and binds the chopped meat so the filling holds together when sliced.
Gelatine
Sets in the stock glaze, giving the finished galantine a glossy, firm coating.

The step that matters

Tying the veal firmly in the cloth. If the roll is loose, the filling can shift and gaps can form during boiling. Firm binding keeps the layers compact so the pressed galantine slices cleanly.

Swap the walnut
